Carrot and Almond cake (mom’s recipe)

I’m not a big fan of overly sweet things, so this is not the usual carrot cake covered in frosting.

INGREDIENTS

300gr. grated of finely chopped carrots

200 gr. ground almond
180 gr. azúcar
4 eggs
80 gr. flour
grated peel of 1 lemon
1 teaspoon of baking powder
a pinch of salt

RECIPE

Mix sugar and eggs until smooth.

Add ground almonds, lemon peel and salt, mix until homogeneous.
Add the grated carrots, flour and baking powder, stir until incorporated

Pre-heat oven to 180ºC (360F). Grease a baking tin and pour the cake mix.

Bake in the oven for 45 min or until done.

(Optional) Decorate with icing sugar or grated coconut.

THERMOMIX Steps

To grate the carrots: put the carrots in big chunks 20 second/speed 5

To make ground almonds: Mill for 10 seconds/speed 7.

Add eggs and sugar to thermomix, 30 Sec. / Speed 5

Add ground almonds, lemon peel and salt 30 Sec. / Speed 4

Add the grated carrots, flour and baking powder 40 Sec. / Speed 4

Pre-heat oven to 180ºC (360F). Grease a baking tin and pour the cake mix.

Bake in the oven for 45 min or until done.

(Optional) Decorate with icing sugar or grated coconut.
