Gazpacho means summer to me. Its one of the easiest and fastest things to make and a classic in Spanish cuisine.
Some ingredients might vary depending on the recipe, some add bread but I like keeping it light.
For people not familiar with this soup, it does not have chili, in fact in Spanish cuisine it is rarely used.
- 1 kg tomatoes
- 1/2 cucumber
- 1 long green pepper
- 1/4 onion
- 1/2 garlic clove
- Vinegar to taste
- 20 g of olive oil
- Blend all together with a powerful blender (Thermomix in my case) and adjust salt and vinegar to taste.
- Some people strain it, but i prefer to have it as it is.
