Here my mum star tortilla.
Everybody thinks their mother/grandma tortilla is the best. Well, they are wrong because my mother’s tortilla is the one 🙂
800 gr. (28oz) potatoes
1 big onion
5 big eggs
Olive oil ( 200 ml/7oz approx.)
Peel the potatoes and the onion and slice them thin. Put them together into a bowl and add salt.
Pour the olive oil in a medium size frying pan -a nonstick pan- and once it is hot, add the potatoes and onion mix. Fry it over medium heat and put on a slotted cover. Don’t forget to stir the mixture frequently.
When fried, removed it from the pan drying the oil and mix it with the whipped eggs in a bowl
-the pan should be just lightly oiled-. Heat the pan medium heat again and pour the mix in. Cook it for around 30 seconds and turn the omelette upside down, using a lid or a plate, to fry it on the other side.
1. Put a plate on top of the pan and hold with one hand
2.Turn quickly so you don´t drop the omelette. It should be cooked on one side
3.Drop it again in the pan (like in the picture) to cook on the other side.
